Motichoor laddoos are a popular Indian sweet, loved for their unique texture and delightful taste. Here is the complete recipe to make these delicious laddoos:

Ingredients:

  1. Gram flour (fine) – 2 cups
  2. Water – as needed
  3. Orange or yellow food color – a pinch
  4. Ghee – for frying
  5. Sugar – 1.5 cups
  6. Water (for sugar syrup) – 3/4 cup
  7. Cardamom powder – 1/2 teaspoon
  8. Chopped pistachios and almonds – 2-3 tablespoons (optional)

Method:

1. Preparing the Batter

  • Sift the gram flour into a mixing bowl. Gradually add water to make a smooth, flowing batter.
  • Add a pinch of food color and mix well to ensure an even consistency. The batter should be neither too thick nor too thin.

2. Making the Boondi

  • Heat ghee in a deep frying pan. Use a perforated ladle or boondi maker for dropping batter into the hot ghee.
  • Hold the ladle over the hot ghee and pour the batter, allowing small droplets (boondi) to fall into the ghee.
  • Fry the boondi on medium heat until they turn light golden. Avoid making them too crispy.
  • Remove the boondi and place them on a paper towel to remove excess ghee.

3. Preparing Sugar Syrup

  • In a pan, combine sugar and water and heat until the sugar dissolves completely.
  • Cook the syrup until it reaches a one-string consistency.
  • Add cardamom powder to the syrup and mix well.

4. Mixing Boondi with Syrup

  • Add the fried boondi to the sugar syrup and mix well, ensuring the syrup coats all the boondi.
  • Cover and let it sit for a few minutes so the boondi can absorb the syrup.

5. Shaping the Laddoos

  • When the mixture is warm enough to handle, take small portions and shape them into round laddoos. You can add chopped pistachios and almonds on top for garnish.

6. Serving and Storing

  • Place the prepared laddoos on a plate to cool and set.
  • Store them in an airtight container. Motichoor laddoos stay fresh for about a week.
