
Recipe for Making Jalebi and Imarti
Jalebi and Imarti are two popular Indian sweets. Jalebi is crispy and sweet, while Imarti is a delicious sweet made from urad dal. Here’s a detailed recipe to make both at home.
Ingredients:
For Jalebi:
- All-purpose flour (maida) – 1 cup
- Semolina or Upma flour – 2 tablespoons
- Yogurt – 1/2 cup
- Baking powder – 1/4 teaspoon
- Saffron (optional) – a pinch
- Ghee or oil – for frying
- Sugar – 1.5 cups (for syrup)
- Water – 1 cup (for syrup)
- Cardamom powder – 1/2 teaspoon (optional)
For Imarti:
- Urad dal – 1 cup (soaked for 12 hours)
- Sugar – 1 cup
- Cardamom powder – 1/2 teaspoon
- Ghee – for frying
Method:
1. Preparing Sugar Syrup (for both)
- In a pan, combine sugar and water. Bring it to a boil, stirring until the sugar dissolves completely.
- Let it simmer for 5-7 minutes until it reaches a one-string consistency. Turn off the heat and set aside.
2. Making Jalebi
- Prepare the Batter:
- In a bowl, mix all-purpose flour, semolina, yogurt, baking powder, and saffron. Mix well to form a thick batter.
- Cover and let it rest for 15-20 minutes.
- Fry the Jalebi:
- Heat ghee or oil in a kadhai (deep pan).
- Pour the batter into a piping bag or zip-lock bag with a small hole cut in the corner.
- Squeeze the batter into the hot oil in spiral shapes and fry until golden brown.
- Remove the jalebis from the oil and dip them immediately in warm sugar syrup for a few minutes.
3. Making Imarti
- Prepare the Batter:
- Grind the soaked urad dal into a smooth batter.
- Add sugar and cardamom powder and mix well.
- Fry the Imarti:
- Heat ghee in a kadhai.
- Using a ladle or a special imarti maker, pour the urad dal batter into the hot ghee to form round shapes.
- Fry until golden brown and then dip in the sugar syrup.
4. Serving
- Serve jalebi and imarti warm. They can be enjoyed with syrup or on their own.
