
Recipe for Making Kanjukatli / Kanju burfi
Kanjukatli is a special Indian sweet, often made during festivals and special occasions. It is made from rice flour and filled with a variety of ingredients. Here’s a detailed recipe to make Kanjukatli at home.
Ingredients:
- Rice flour – 2 cups
- Jaggery (grated) – 1 cup
- Water – 2 cups
- Grated coconut – 1 cup
- Cardamom powder – 1/2 teaspoon
- Ghee – 2 tablespoons (for frying)
- Chopped pistachios and almonds – for garnish (optional)
Method:
1. Preparing Jaggery Syrup
- In a pan, combine jaggery and 1 cup of water. Heat it over medium flame until the jaggery dissolves completely.
- Once the jaggery has dissolved, boil the syrup for about 5-7 minutes until it reaches a one-string consistency.
2. Preparing Rice Flour Mixture
- In a bowl, mix rice flour and cardamom powder.
- Pour the jaggery syrup into the rice flour mixture and mix well.
- Add the grated coconut and knead the mixture until it forms a smooth dough.
3. Kneading the Dough
- If the mixture feels too dry, add a little water and knead until the dough is soft and pliable.
4. Shaping the Kanjukatli
- Take small portions of the dough and roll them into balls. Then flatten them into a round shape using a rolling pin, ensuring they are not too thin.
- Fry these rounds in ghee until they turn golden brown.
5. Garnishing and Cooling
- Once fried, place the Kanjukatli on a plate and garnish with chopped pistachios and almonds.
- Let them cool down to room temperature.
6. Serving
- Serve the Kanjukatli once they have cooled down. This sweet can be enjoyed during festivals and special occasions.
