Recipe for Making Delicious Soan Papdi

Soan Papdi is a flaky and light Indian sweet that melts in your mouth and has a unique, layered texture. Here is a complete recipe to make delicious Soan Papdi at home.

Ingredients:

  1. Gram flour (besan) – 1 cup
  2. All-purpose flour (maida) – 1 cup
  3. Ghee – 1 cup
  4. Sugar – 2 cups
  5. Water – 1/2 cup
  6. Cardamom powder – 1/2 teaspoon
  7. Chopped nuts (pistachios, almonds) – 2-3 tablespoons

Method:

1. Roasting the Flour

  • Heat ghee in a heavy-bottomed pan.
  • Add gram flour and all-purpose flour to the ghee and roast on low heat, stirring continuously until the flour turns golden and aromatic. This process takes about 10-15 minutes.
  • Set the roasted flour aside to cool slightly.

2. Preparing the Sugar Syrup

  • In another pan, add sugar and water. Heat until the sugar dissolves completely.
  • Boil the mixture until it reaches a two-string consistency (when you drop a small amount between your fingers, it forms two threads).

3. Mixing and Stretching

  • Add the cardamom powder to the sugar syrup.
  • Pour the hot syrup into the roasted flour mixture and stir quickly until everything is well combined.
  • Pour the mixture onto a greased plate or flat surface.
  • Let it cool slightly, then start pulling and stretching the mixture to create a flaky texture.

4. Shaping the Soan Papdi

  • Spread the mixture evenly in a rectangular shape on the greased plate.
  • Sprinkle chopped nuts on top and press them gently into the mixture.
  • Once set, cut into small squares or diamond shapes.

5. Serving and Storing

  • Allow the Soan Papdi to cool completely before serving.
  • Store in an airtight container. Soan Papdi stays fresh for up to 2 weeks.
